Are there rules against riding horse cross country in the United States?

I am wanting to travel coast to coast by horse and pack mule. What problems can I expect? Are there communities that have like laundry and hotels/motels for cleaning up only that I can take the animals to while cleaning up and getting supplies or will I have to be satisfied with streams, creeks, rivers, and lakes?
