Help me understand why this does not hold true for evolution?

If I lion mates with a tiger you get a liger. Liger will not be able to mate. Same things hold for mules and other inter breed animals. The something holds true for hybrid plants. This is proven fact. So with evolution wouldn�t the same scientific fact hold true.
